This dish is best suited to starchy chat potatoes. A favourite around the picnic table and simple to pull together.
- Par-cook the potatoes until just tender
- Lightly squash or cut them depending on the variety being used
- Toss with olive oil and salt
- Finish over a hot BBQ until deeply golden, crispy and charred around the edges
- Smother with garlic and herb butter, fresh lemon and flaky salt.

A proper BBQ baked potato with crisp skin and a light, fluffy interior.
Keep the toppings classic but really good: butter, sour cream, chives, sharp cheddar and crispy shallots.
This does not need to become an overloaded or complicated baked potato. The point should be that choosing the right potato and cooking it properly gives you that great contrast between the crisp outside and fluffy centre.

THE HERO RECIPE

The one that gets dressed while still warm, so the potatoes soak up every drop. Serves 8 as a side, takes 25 minutes, travels to the park beautifully.
- Boil Kipflers whole in well salted water until just tender, 12–15 minutes.
- Drain and cool slightly.
- Slice into thick rounds while still warm.
- Whisk Dijon, white wine vinegar, olive oil, a pinch of sugar and salt.
- Fold through with spring onion and dill.
- Serve warm or at room temperature.
SENSATIONAL SALAD

Pink Fir Apple is the hero of this potato salad when available.
A simple yet showstopping dish that is feel creamy, sharp, herby and fresh. It works served slightly warm, at room temperature or cold, making it just right for a BBQ.
- Cut the potatoes into generous, even pieces
- Gently simmer in well salted water until just tender
- Drain and allow to steam dry briefly
- Dress while still warm with a sharp Dijon and lemon dressing, plenty of fresh dill and finely sliced spring onion
- Finish with crispy shallots for texture
- A little crème fraîche could also be incorporated into the dressing to give it richness without turning it into a heavy mayonnaise style potato salad
