Nicola are naturally low GI rating, with a yellow buttery flesh. They are a firm potato and will hold its shape after boiling, making it perfect for salads. They make a dense creamy mash and good roasted if you part boil; as this will make them crisp up easier.
Have used the Nicola spud in a variety of methods and it works really well. Specifically purchased because it is identified as a lower GI spud.
I received the Maris Piper and the Wilwash potatoes only.
The Maris Piper I cut in rounds (with skin on) and roasted under a free-range chicken. They were delicious, golden.
The Wilwash I roasted in quarters also skin on (scrubbed), in olive oil with some fresh herbs and they were also delicious and creamy. Jorge Thaler
Delicious and waxy
Love these yellow fleshed treats and will often cook up a couple for my lunch. With a bit of butter of course! Come summer I'll be using these for potato salad.
