"GOURMET/FINGERLING"
These potato varieties get their notoriety because of their shape and/or seasonality.
They are more delicate and harder to harvest, needing to be hand dug.
The deep rich colours of some of this category’s varieties are sought after for their antioxidant
properties, or just because of their unique flavour profiles.
You can have lots of fun with them, from purple mash or pink gnocchi!
"STARCHY" POTATOES
Potatoes in this category have a higher starch content, which helps give them a great “crunch”, and because they are drier (lower in moister), they are perfect for making:
• Roast potatoes
• Bakes potatoes
• Fried potatoes
• Wedges, Chips & French Fries
• Mashed potato (the light & fluffy kind)
• Potato rosti
• Hashbrowns
• Hasselback potatoes
"WAXY" POTATOES
These potatoes are generally lower in GI and are 'more diet-friendly' (depending on how they are cooked), and because they have a high moisture content and won’t absorb water during the cooking process, they will stay firm and hold their shape. That makes them perfect for making:
- Mashed potato (the creamy & dense kind)
- Boiled potatoes
- Salads
- Curries
- Potato au gratin
- Roasting (when you par-boil them first)

- Did you know that potatoes are seasonal?
- Here in Victoria (where we are based) we have 2 seasons in the year - “Autumn/Winter” and “Summer”.
- Some of the more unusual varieties might only be around for a short time, whilst others might be here a bit longer in the season.
- So eat them when they’re around - when the season is over they will be gone until we get new ones.
- Whether they are new season or end of season - they are all delicious!
