Coliban is at its best roasted. Parboil until the edges begin to soften, then drain and steam dry well. Rough up the surfaces, toss in hot oil and season generously before roasting at high heat until deeply golden outside and soft and fluffy through the centre.

Coliban makes a great light, fluffy mash. Boil gently until tender, drain well and allow the potatoes to steam dry before mashing with butter and warm milk. Keep a light hand for the best texture.

Coliban makes a great traditional baked potato. Bake whole until the skin is crisp and the white flesh inside is soft and fluffy, then split and serve simply or load with your favourite toppings.

Coliban's texture is better suited to roasting, baking and mash than serving boiled, as the flesh can begin to break down in the pot.

Boil skin on in salted water for around 15 minutes for a casual side or a relaxed salad. For a salad where you need crisp, intact pieces, a waxy variety is the better choice.

Coliban performs well in the air fryer. Parboil briefly, steam dry, toss lightly in oil and cook at high heat until golden and crisp outside with a fluffy centre.

Peel for a clean white mash, or leave the skin on for roasting and baking. Allow Coliban to steam dry after boiling or parboiling before mashing or roasting for the best texture. Its medium-starch flesh can begin to break down when boiled, so choose a waxy variety where you need the potato to hold its shape. Check for any green areas and cut them away generously before cooking.

Cool, dark and dry

A pantry or cupboard away from sunlight is ideal. Light exposure can cause greening and too much warmth accelerates sprouting.

Don’t refrigerate

Cold converts potato starch to sugar, affecting both flavour and texture when cooked. Starchy varieties are specifically sensitive to cold storage - so to keep the crisp and crunch you're looking for - keep them out of the fridge.

No sealed plastic bags

Potatoes need to breathe. The paper bag they arrive in is perfect or a breathable container.

Keep away from onions

Storing onions and potatoes together makes both deteriorate faster.

Shelf life

Fresh potatoes at the start of the season can keep for up to around 4 weeks in ideal conditions.

If it has a green tinge

Greening comes from light exposure and happens to any variety. Cut the green away generously and cook the rest; if it runs throughout, discard it.

When your order arrives

Open the box straight away and move the potatoes somewhere cool and dark. Minor transit marks are normal for fresh produce and don't affect flavour or quality.
