 Purple Sapphire is one of our most visually distinctive potatoes, with purple skin and beautifully variegated purple and white flesh inside. Its medium-low starch texture holds together well when cooked, making it brilliant sliced over pizza, while also performing beautifully in golden roasts, salads, steaming and potato bakes. With very limited seasonal availability, it’s a specialty variety we only see for a short window each year.

Cover with cold salted water, bring to the boil and cook for 15 to 20 minutes depending on size. Test with a skewer, you want it to slide in with a little resistance. Keeping the boil gentle helps the flesh hold both its shape and its colour.


Boil whole until just tender, cool slightly, then halve or slice. Dress while still warm so the flesh drinks in the vinaigrette. The firm texture means the pieces stay distinct rather than breaking down.

The ability to slice cleanly makes it well suited to layered potato bakes, with the purple and white flesh creating an interesting effect through the layers.


Steam whole or halved for 15 to 20 minutes until just tender. This is a gentler method than boiling and helps the purple colour stay vivid and intact.

Leave the skin on where appropriate and slice through the potato to show off its naturally variegated purple and white flesh. The pattern varies naturally from potato to potato and is part of what makes Purple Sapphire distinctive.

For pizza and potato bake, slicing across the potato is particularly good because it exposes the internal pattern.

Skip the fridge, where cold converts the starch to sugar and softens the texture you actually want from a waxy potato. Keep it in its paper bag rather than sealed plastic so it can breathe, and store it away from onions, which hasten spoiling for both.

Purple Sapphire is one of the more unusual potatoes in the Spud Sisters range. Beneath its deep purple skin is naturally variegated purple and white flesh, creating a different pattern every time you cut one open.

That pattern is a big part of why we love the variety. Sliced across a pizza, layered into a potato bake or cut through for salads and roasting, Purple Sapphire brings something genuinely different to the plate while still being a very useful potato in the kitchen. Its harvest is also very limited, so it’s one of those specialty varieties we only have access to for a short period each year.

Purple Sapphire's purple flesh carries anthocyanins, the same antioxidant pigment family found in blueberries and red cabbage, and gentler cooking keeps more of it intact. Purple fleshed varieties carry a higher antioxidant load than standard white or yellow potatoes. Its lower starch, waxy profile sits a little easier on the glycaemic index than floury varieties, and it offers potassium for healthy blood pressure alongside vitamin C and B6 for immune function and energy metabolism. It is naturally gluten free, and cooked and cooled, perfect for salads, it develops resistant starch that feeds beneficial gut bacteria.

Cool, dark and dry

A pantry or cupboard away from sunlight is ideal. Light exposure can cause greening and too much warmth accelerates sprouting.

Don’t refrigerate

Cold converts potato starch to sugar, affecting both flavour and texture when cooked. Starchy varieties are specifically sensitive to cold storage - so to keep the crisp and crunch you're looking for - keep them out of the fridge.

No sealed plastic bags

Potatoes need to breathe. The paper bag they arrive in is perfect or a breathable container.

Keep away from onions

Storing onions and potatoes together makes both deteriorate faster.

Shelf life

Fresh potatoes at the start of the season can keep for up to around 4 weeks in ideal conditions.

If it has a green tinge

Greening comes from light exposure and happens to any variety. Cut the green away generously and cook the rest; if it runs throughout, discard it.

When your order arrives

Open the box straight away and move the potatoes somewhere cool and dark. Minor transit marks are normal for fresh produce and don't affect flavour or quality.
