Red Foo potatoes make an excellent roast potato, developing beautifully crisp edges while keeping its striking red-pink colour. Give it a little more time and heat than a high-starch variety to get the best crunch.

Red Foo potatoes takes beautifully to boiling. Its firm flesh holds together well and that striking red-pink colour survives the pot, making it as useful as it is beautiful.

Steaming preserves both the texture and the colour at their best. Serve simply with butter and salt and let the variety do the talking.

This is where Red Foo shines. Firm enough to hold its shape through dressing and chilling, with a red-pink flesh that makes a potato salad genuinely striking.

Red Foo potatoes can also be mashed. Its smaller size means a little more preparation, but it produces a smooth, flavourful mash.

Red Foo earned its name when a child described the oblong red potato as looking like a red foot, and the name stuck.

Red Foo is an unusual specialty variety with a rich flavour and impressive versatility in the kitchen. We first sourced it from Tasmania and quickly saw there was much more to this potato than its striking appearance. It’s now a firm favourite in our range, and we’ve recently planted Red Foo in Ballarat too.

Cool, dark and dry

A pantry or cupboard away from sunlight is ideal. Light exposure can cause greening and too much warmth accelerates sprouting.

Don’t refrigerate

Cold converts potato starch to sugar, affecting both flavour and texture when cooked. Starchy varieties are specifically sensitive to cold storage - so to keep the crisp and crunch you're looking for - keep them out of the fridge.

No sealed plastic bags

Potatoes need to breathe. The paper bag they arrive in is perfect or a breathable container.

Keep away from onions

Storing onions and potatoes together makes both deteriorate faster.

Shelf life

Fresh potatoes at the start of the season can keep for up to around 4 weeks in ideal conditions.

If it has a green tinge

Greening comes from light exposure and happens to any variety. Cut the green away generously and cook the rest; if it runs throughout, discard it.

When your order arrives

Open the box straight away and move the potatoes somewhere cool and dark. Minor transit marks are normal for fresh produce and don't affect flavour or quality.
