Parboil until the outside is beginning to soften, drain well and allow to steam dry before roughing up the edges. Toss into hot oil and roast until deeply golden and crisp. Otway Red's medium-high starch gives you the combination you want in a roasting potato: plenty of crunch outside with a fluffy white centre.

Boil until tender, drain thoroughly and allow the steam to escape before mashing with warm butter and milk. The starchy white flesh produces a light, fluffy mash. Avoid overworking once cooked.

Bake whole until the red skin crisps and the white flesh inside becomes soft and fluffy. The medium to larger potatoes are particularly well suited to this.

Otway Red's firm, creamy flesh holds its shape, which makes boiling a natural fit. Cover with cold salted water, bring to the boil and cook for around 15 minutes until tender. Lovely as a simple buttered side with the red skin left on.

Prick the skins, rub with oil and salt, and bake at 200C for around 75 minutes until the skin is crisp and the inside soft.

Keep the red skin on for roasting and whole baking where it adds colour and texture. For the crispiest roast potatoes, parboil first, allow them to steam dry well and rough up the edges before transferring to hot oil. For mash, peel if you want a clean white finish and avoid overworking the potato once cooked due to its higher starch content.

Otway Red is an Australian-developed potato variety, bred from Norchief and Bison and selected for the fresh potato market. It has become a recognisable Victorian variety, known for its distinctive red skin, deep-set eyes and white flesh.

Cool, dark and dry

A pantry or cupboard away from sunlight is ideal. Light exposure can cause greening and too much warmth accelerates sprouting.

Don’t refrigerate

Cold converts potato starch to sugar, affecting both flavour and texture when cooked. Starchy varieties are specifically sensitive to cold storage - so to keep the crisp and crunch you're looking for - keep them out of the fridge.

No sealed plastic bags

Potatoes need to breathe. The paper bag they arrive in is perfect or a breathable container.

Keep away from onions

Storing onions and potatoes together makes both deteriorate faster.

Shelf life

Fresh potatoes at the start of the season can keep for up to around 4 weeks in ideal conditions.

If it has a green tinge

Greening comes from light exposure and happens to any variety. Cut the green away generously and cook the rest; if it runs throughout, discard it.

When your order arrives

Open the box straight away and move the potatoes somewhere cool and dark. Minor transit marks are normal for fresh produce and don't affect flavour or quality.
