Blackwood Gold potatoes have brown skin over deep golden flesh, with a medium-high starch texture that makes them particularly well suited to traditional potato dishes. They're exceptional roasted, developing a golden exterior and light, fluffy centre, while also making a beautiful mash, fluffy baked potato and smooth blended soup. Grown in Ballarat, Blackwood Gold is an old-school country variety with plenty of character.

C o o k i n g   M e t h o d s   &   P r e p a r a t i o n

Parboil cut pieces in salted water for 10 to 12 minutes. This roughens the surface and gives the oil more to grip, which is what produces a proper crust. Drain well, steam dry in the pot, then toss in good oil and season generously. Roast at 200 to 210°C on a preheated tray with hot oil, placing the potatoes in carefully and cut side down where possible so they sizzle on contact. Turn once at the halfway mark. Allow around an hour in total for a good sized cut.

Blackwood Gold is one of the better starchy varieties for the air fryer. Parboil briefly for 8 to 10 minutes, drain and steam dry, then air fry at 200°C for 20 to 25 minutes, shaking the basket halfway through. The result is close to oven roasting in considerably less time.

This is Blackwood Gold’s lesser known talent. As a starchy variety it breaks down smoothly under heat and produces a thick, silky blended soup with a clean texture. Cook in stock until very tender, then blend. Cream is optional.

Pierce the skin, rub with oil and salt, and bake whole at 200°C for 60 to 75 minutes. The starchy flesh produces a genuinely fluffy baked interior that falls apart cleanly when you split it open.

Blackwood Gold makes a light, fluffy mash with a naturally golden colour. Boil until tender, drain and steam dry well before mashing gently with butter and warm milk. Keep the mixing light for the best texture.

The skin can be left on for baking and roasting, or peeled for a smoother mash.

After boiling or parboiling, allow the potatoes to steam dry before mashing or roasting for the best texture.

Cut into even-sized pieces for consistent cooking.

Check for any green areas and cut them away generously before cooking.

Cool, dark and dry

A pantry or cupboard away from sunlight is ideal. Light exposure can cause greening and too much warmth accelerates sprouting.

Don’t refrigerate

Cold converts potato starch to sugar, affecting both flavour and texture when cooked. Starchy varieties are specifically sensitive to cold storage - so to keep the crisp and crunch you're looking for - keep them out of the fridge.

No sealed plastic bags

Potatoes need to breathe. The paper bag they arrive in is perfect or a breathable container.

Keep away from onions

Storing onions and potatoes together makes both deteriorate faster.

Shelf life

Fresh potatoes at the start of the season can keep for up to around 4 weeks in ideal conditions.

If it has a green tinge

Greening comes from light exposure and happens to any variety. Cut the green away generously and cook the rest; if it runs throughout, discard it.

When your order arrives

Open the box straight away and move the potatoes somewhere cool and dark. Minor transit marks are normal for fresh produce and don't affect flavour or quality.
