Smaller, sweeter and gentler than a brown onion, red shallots bring a delicate, almost garlicky sweetness to everything they touch. Slice them raw through a dressing or salad, caramelise them low and slow, or roast them whole until soft and jammy. The quiet achiever every good cook keeps within reach.

AboutRedShallots
Red shallots are the small, reddish purple shallots at the heart of Thai, Vietnamese and wider Southeast Asian cooking. Their concentrated flavour goes a long way, and ours are Australian grown.
Crisp fried shallots, the golden topping scattered over noodle soups, rice and salads across Southeast Asia, are made from exactly this variety. Sliced finely and fried gently, they turn sweet, golden and deeply savoury.
Pound them into curry pastes, slice them raw into Thai style salads, or fry them slowly into crisp golden flakes to scatter over almost anything, including a tray of roasted chats.
Keep in a cool, dark, airy spot out of the fridge. Whole red shallots store well for several weeks.
