Vibrant, crunchy and naturally sweet, red onions can be used raw, are ideal for salads, pickling, tacos and sandwiches. Slice thinly for colour and freshness in just about anything.
Red onions bring colour and a milder, sweeter flavour that suits eating raw. Their layers of deep purple and white lift anything they are added to, and ours are Australian grown.
The colour in red onion skin comes from anthocyanins, the same natural pigments that colour berries and purple potatoes. A splash of vinegar keeps the colour vivid, which is why pickled red onion turns such a brilliant pink.
Slice raw into salads and burgers, pickle it quickly with vinegar and a pinch of sugar, or roast it in wedges until sweet. Try it pickled through a creamy potato salad of Pink Fir Apple for colour and cut through.
Keep whole onions in a cool, dark, ventilated spot away from potatoes. Once cut, refrigerate wrapped and use within a few days.
