Shallots are a member of the onion family, smaller and sweeter with a gentle flavour prized in French cooking. Ours are Australian grown and delivered to you fresh.

Where an onion can dominate, a shallot flatters. Finely diced, it melts into vinaigrettes, pan sauces and butter sauces, giving depth while letting the main ingredient lead. It is the difference you taste in restaurant cooking at home.

Whisk minced shallot into a red wine vinaigrette, soften it in butter as the base of a sauce, or roast it whole until sweet and collapsing. Roasted whole shallots alongside crispy chat potatoes make a very fine tray.

Store in a cool, dark, dry spot with good airflow, out of the fridge. Whole shallots keep for several weeks; once peeled or cut, refrigerate and use within a few days.
