C o o k i n g   M e t h o d   &   P r e p a r a t i o n

  • Halve or cut into wedges.
  • Toss in good olive oil, season generously, and roast at 200°C for 25–35 minutes (significantly less time than you'd expect).
  • The vivid golden flesh deepens further in the oven and the natural sugars caramelise beautifully at the edges.
  • The result is a roast potato with a flavour profile that stands entirely on its own.
  • Boil gently in salted water for 15–18 minutes, again, faster than you'd expect.
  • Drain well, steam dry, and mash while hot.
  • The flesh mashes to a rich, deeply golden result with an intense, nutty flavour.
  • Butter is almost optional, the potato has enough to say for itself.
  • For the most luxurious finish, pass through a fine sieve or ricer rather than a traditional masher.
  • Boil whole until just cooked through, 15–18 minutes.
  • Press flat on a baking tray with the base of a glass, drizzle generously with olive oil, season well, and roast at 220°C for 20–25 minutes.
  • The thin skin crisps beautifully while the interior stays dense and flavoursome.
  • Finish with sea salt and fresh herbs.
  • Place whole on a tray and bake at 190°C for 35–45 minutes.
  • The quicker cook time makes this a practical option for weeknights.
  • Split and serve with butter, crème fraîche, or as a base for simple loaded toppings.
  • Pierce the skin, wrap in a damp paper towel, and microwave on high for 3–4 minutes, faster than any other variety.
  • Rest for 2 minutes before serving.
  • The flavour holds up remarkably well, which isn't always the case with a microwave.
  • The thin skin is edible and worth keeping, it contributes to the overall flavour and the vivid golden colour of the dish.
  • The flesh will be noticeably more deeply coloured than any standard potato variety, a rich yellow/orange.
  • This is natural and a sign of the variety's high carotene content.
  • Check for green tinge and cut away as you would with any variety. As the skin is pale, this is straightforward to spot.

A note on cooking time
Andean Sunrise cooks approximately 30% faster than conventional potato varieties due to its finer cellular structure.

Start checking for doneness earlier than you normally would. This is an advantage, but worth knowing so you don't overcook it.

Andean Sunrise is a very distinctive potato in the Spud Sisters range and the one that behaves least like the varieties most people have cooked with before. The flesh is deep golden through to orange, far richer in colour than the pale to mid yellow of a standard potato, and the flavour is rich and buttery in a way that comes through most clearly when it is roasted.

It is a starchy variety, so it does what starch does well providing crisp edges, a light centre, and a mash with body. It also cooks faster than a conventional potato, which is an advantage once you know to expect it.

  • High carotene the vivid yellow/orange flesh is a direct indicator of very high beta carotene content, the same antioxidant found in carrots and sweet potatoes. This is the most carotene rich variety in the Spud Sisters range and genuinely sets it apart nutritionally from standard potato varieties

Cool, dark and dry

A pantry or cupboard away from sunlight is ideal. Light exposure can cause greening and too much warmth accelerates sprouting.

Don’t refrigerate

Cold converts potato starch to sugar, affecting both flavour and texture when cooked. Starchy varieties are specifically sensitive to cold storage - so to keep the crisp and crunch you're looking for - keep them out of the fridge.

No sealed plastic bags

Potatoes need to breathe. The paper bag they arrive in is perfect or a breathable container.

Keep away from onions

Storing onions and potatoes together makes both deteriorate faster.

Shelf life

Fresh potatoes at the start of the season can keep for up to around 4 weeks in ideal conditions.

If it has a green tinge

Greening comes from light exposure and happens to any variety. Cut the green away generously and cook the rest; if it runs throughout, discard it.

When your order arrives

Open the box straight away and move the potatoes somewhere cool and dark. Minor transit marks are normal for fresh produce and don't affect flavour or quality.
