I’ve been working on condensing the hundreds of recipes out there, to come up with a repeatable crispy fry recipe and a homemade chicken salt that works well with the fry.
The Russets are the go for both. The only issue was the shipping company taking almost a week to deliver them (Melbourne to Sydney metro). For perishable foods, this is not good. You can put them in the fridge to stop sprouting, but that also loses moisture due to the nature of frost-free fridges. In the end, I ended up cooking them all so they didn’t spoil, and have a recipe that works with freezing. Next-day Amazon style, seems like a better option, assuming there is not a huge difference in cost.
