Cool, dark and dry

A pantry or cupboard away from sunlight is ideal. Light exposure can cause greening and too much warmth accelerates sprouting.

Don’t refrigerate

Cold converts potato starch to sugar, affecting both flavour and texture when cooked. Starchy varieties are specifically sensitive to cold storage - so to keep the crisp and crunch you're looking for - keep them out of the fridge.

No sealed plastic bags

Potatoes need to breathe. The paper bag they arrive in is perfect.

Keep away from onions

Storing onions and potatoes together makes both deteriorate faster.

Shelf life

Fresh potatoes at the start of the season can keep for up to around 4 weeks in ideal conditions.

If it has a green tinge

Greening comes from light exposure and happens to any variety. Cut the green away generously and cook the rest; if it runs throughout, discard it.

When your order arrives

Open the box straight away and move the potatoes somewhere cool and dark. Minor transit marks are normal for fresh produce and don't affect flavour or quality.

Cut into even pieces and parboil for around 8 to 10 minutes, then drain and let the steam dry off. Toss in good olive oil and salt and roast at 200C for 35 to 40 minutes, turning once. The medium starch gives you a golden edge with a smooth, buttery centre.


Boil until just tender, drain well, and let the potatoes steam dry in the pot for a minute before mashing. The flesh is naturally rich and golden, so a modest amount of butter and warm milk is all you need for a smooth, indulgent gold mash. Do not over work it.


Cover with cold salted water, bring to the boil, and cook for 20 to 25 minutes depending on size. Test with a skewer, looking for a clean slide with a little resistance. As an all rounder it holds together well enough to serve in pieces.


Layer sliced Peruvian Gold into a gratin or bake with stock, cream and herbs. The buttery flesh and even texture make it a natural for slow cooked, golden, comforting dishes.


There is no need to peel for roasting or boiling, since the skin is thin and adds character, so a gentle scrub is enough. For the smoothest mash, peel after boiling to keep the flesh from taking on water. If a green tinge appears on the skin, cut it away generously before cooking.
