That combination gives them their signature texture when cooked: beautifully crisp on the outside and light and fluffy within. This is what Russet was born for. Cut to size, soak in cold water to rinse off surface starch, then twice cook, a first lower fry to cook through, a rest, then a hotter second fry to crisp and colour. The high starch gives you that fluffy inside under a genuinely crunchy shell.

Bake at 220°C until the skin is crisp and the centre is completely soft, usually around 60–75 minutes depending on size.


Boil whole in their skins, peel once cool enough to handle, and mash. The dry, floury flesh makes a light, fluffy mash, ideal under a shepherd's pie. Use a ricer and keep it gentle, never a food processor.

Parboil first, then roast at 220°C until crisp and golden. The starchy flesh roughs up beautifully around the edges, creating plenty of surface area for a seriously crisp roast potato.

Russets can be left unpeeled for chips and roasts, with the thick skin adding extra texture and crunch. For baked jackets, the skin is one of the best bits.

For the smoothest mash, boil whole and peel after cooking.

Green tinge can be harder to spot against russet skin, so check carefully and cut away any green areas before cooking.

For dishes where you want the potato to stay firm and hold its shape, reach for a waxy variety such as Dutch Cream instead.


Stash your Russet somewhere cool and dark, a pantry or cupboard away from the light. Sunlight causes greening and warmth brings on sprouting, so keep it out of both. Do not refrigerate, since cold turns the starch to sugar, which is especially bad news here, as it makes chips brown too fast and lose their crunch. Keep it out of sealed plastic, since potatoes need to breathe, and the paper bag they arrive in is fine. Store it away from onions, which speed up spoiling for both. Shelf life runs to up to four weeks in good conditions, one of the better keepers, which suits a pantry staple you reach for on chip night. If a green tinge appears, it can be a little harder to spot against the russet skin, so look closely and cut away anything greenish before cooking. When your order arrives, open the box and move the potatoes to a cool dark spot, the odd transit mark is normal for fresh produce.

  • The thick skin is also a source of dietary fibre, so it’s well worth leaving on.
  • When cooked and cooled, it develops resistant starch that feeds beneficial gut bacteria.

Cool, dark and dry

A pantry or cupboard away from sunlight is ideal. Light exposure can cause greening and too much warmth accelerates sprouting.

Don’t refrigerate

Cold converts potato starch to sugar, affecting both flavour and texture when cooked. Starchy varieties are specifically sensitive to cold storage - so to keep the crisp and crunch you're looking for - keep them out of the fridge.

No sealed plastic bags

Potatoes need to breathe. The paper bag they arrive in is perfect or a breathable container.

Keep away from onions

Storing onions and potatoes together makes both deteriorate faster.

Fresh potatoes at the start of the season can keep for up to around 4 weeks in ideal conditions.

If it has a green tinge

Greening comes from light exposure and happens to any variety. Cut the green away generously and cook the rest; if it runs throughout, discard it.
