A renowned French potato, that has all chefs drawn in! They have a smooth and buttery texture, and can be used for boiling, sautéing, mashing and roasting!
They have a nice fluffy (flourly) but solid texture. Very rascally skin. Yum!

La Ratte - really interesting and versatile variety
I was excited to see the La Ratte variety being offered by the Spud Sisters!
This variety was the preferred spud of the late French chef Lubuchon and he used these to make his famous puree de pomme de terre - mashed spuds with loads of butter you push through a sieve. I have given this a go with a great result. These spuds have a chestnutty flavour which gives your mash a distinctive flavour. Give them a try. I know i will be again.

Wonderfully versatile potato... equally good mashed, as wedges, in salad ... makes a great Salade Niçoise. Superior to Kipfler in all ways (imho).
