Maris Piper is the most widely grown potato variety in the United Kingdom, it has been since 1980. The name comes from Maris Lane in Cambridge, where the Plant Breeding Institute developed it in the 1960s. The "Piper" was suggested by the breeder's son, who thought potato varieties should start with "P." 

What emerged from that Cambridge program was a variety with unusually high dry matter and low reducing sugars, the precise combination that gives you a light, fluffy interior and a genuinely crispy exterior when roasted or fried. Every British chip shop knows it. Every serious home cook eventually finds their way to it.

In Australia, that's the catch. Maris Piper is not commonly commercially stocked by supermarkets here. For decades, British expats and food curious home cooks have gone looking for it and come up short.

Cool, dark and dry

A pantry or cupboard away from sunlight is ideal. Light exposure can cause greening and too much warmth accelerates sprouting.

Don’t refrigerate

Cold converts potato starch to sugar, affecting both flavour and texture when cooked. Starchy varieties are specifically sensitive to cold storage - so to keep the crisp and crunch you're looking for - keep them out of the fridge.

No sealed plastic bags

Potatoes need to breathe. The paper bag they arrive in is perfect.

Keep away from onions

Storing onions and potatoes together makes both deteriorate faster.

Shelf life

Fresh potatoes at the start of the season can keep for up to around 4 weeks in ideal conditions.

If it has a green tinge

Greening comes from light exposure and happens to any variety. Cut the green away generously and cook the rest; if it runs throughout, discard it.

When your order arrives

Open the box straight away and move the potatoes somewhere cool and dark. Minor transit marks are normal for fresh produce and don't affect flavour or quality.

C o o k i n g   M e t h o d s   &   P r e p a r a t i o n

This is where Maris Piper earns its reputation. Parboil cut potatoes in salted water for 10–12 minutes first. Add a small pinch of bicarb soda to the boiling water, this roughens the surface of the potato and creates more surface area for the oil to grip, which is what gives you that proper crust. Drain well and let them steam-dry in the pot for a full minute before doing anything else.

Preheat your roasting tray in the oven at 200–210°C, and heat a generous layer of oil in it at the same time, you want both hot before the potatoes go in. Toss your parboiled potatoes in oil, season well, then carefully place them in the hot tray. You should hear them sizzle. Roast for around an hour, turning once halfway through. Do not rush them.

The result: a potato that shatters when you cut it, fluffy and dry inside.

Maris Piper is the chip potato. Slice into thick chips or wedges, toss in oil and seasoning, and roast at 210°C for 35–45 minutes. For thinner, crispier chips, parboil for 5 minutes first. For an air fryer, Maris Piper and Russet are the best starchy varieties, parboil briefly, then air fry at 200°C for 20–25 minutes.

Boil gently, not at a rolling boil, which breaks down the exterior before the centre is cooked through. Drain, steam dry in the pot, then mash. Maris Piper produces a light, fluffy mash rather than the dense, creamy result you get from Dutch Cream. For the creamiest possible result, use Dutch Cream. For the lightest and most voluminous mash, Maris Piper is the better choice.

Pierce the skin, rub with oil and salt, and bake at 200°C for 60–75 minutes depending on size. The high dry matter content of Maris Piper produces a properly fluffy baked interior, the kind that falls apart when you fork it open.

For a blended or creamy potato soup, Maris Piper breaks down beautifully and produces a naturally thick, smooth result without needing cream to compensate.

  • Peel for roasting and mashing; skin on works well for wedges and smashed potatoes.
  • The bicarb soda tip (quarter teaspoon per small pot, half per medium) is the single biggest upgrade to a roast potato, don't skip it.
  • If any green tinge appears on the skin, cut it away generously. Standard advice for all varieties, light exposure, not a quality issue.
