Epic earns its name on size. It runs noticeably larger than most varieties in the Spud Sisters range, which makes it the natural choice for a baked jacket, the kind you split open, pile high and call dinner. A big potato that looks impressive on the plate without trying too hard.

Beyond the size, it is a straightforward, honest all rounder: clean in flavour, reliable in texture and happy to be roasted or mashed when you are not in a jacket mood. It does not overcomplicate things, which is exactly why it works for a crowd.

Cool, dark and dry

A pantry or cupboard away from sunlight is ideal. Light exposure can cause greening and too much warmth accelerates sprouting.

Don’t refrigerate

Cold converts potato starch to sugar, affecting both flavour and texture when cooked. Starchy varieties are specifically sensitive to cold storage - so to keep the crisp and crunch you're looking for - keep them out of the fridge.

No sealed plastic bags

Potatoes need to breathe. The paper bag they arrive in is perfect.

Keep away from onions

Storing onions and potatoes together makes both deteriorate faster.

Shelf life

Fresh potatoes at the start of the season can keep for up to around 4 weeks in ideal conditions.

If it has a green tinge

Greening comes from light exposure and happens to any variety. Cut the green away generously and cook the rest; if it runs throughout, discard it.

When your order arrives

Open the box straight away and move the potatoes somewhere cool and dark. Minor transit marks are normal for fresh produce and don't affect flavour or quality.

C o o k i n g   M e t h o d s   &   P r e p a r a t i o n

Cut into even chunks and parboil for around 10 minutes. Drain, rough up the surfaces, toss in hot oil and season. Roast at 220C for around 45 minutes, turning once, for a golden, family sized roast.

Boil whole in their skins until tender, then peel and mash. The clean, cream flesh gives a mild, smooth mash that takes butter, milk and seasoning readily.


Cut into thick wedges, skin on, and parboil for 8 minutes. Toss in oil, salt and paprika, then roast at 210C for 30 to 35 minutes, turning once, until golden outside and fluffy within. Epic's generous size means fewer cuts for a full tray of wedges.


Slice into thick rounds, parboil for 5 minutes, then brush with oil and grill over medium heat for 6 to 8 minutes per side until charred and tender through. The larger size means thick slices hold together well on the grill without falling apart.

For a jacket, leave the skin on and scrub it well, since the soft skin is part of the appeal. Prick all over before baking to let steam escape. Peel for mash if you want a smooth, pale finish. Cut away any green patches generously before cooking. Given the size, allow a little extra cooking time and check the centre is tender right through.

Find your Epic potatoes a cool, dark home and they will hold well. A pantry or cupboard out of the light keeps greening at bay, and away from warmth they are slower to sprout. Do not refrigerate them, since cold turns the starch to sugar and affects flavour and texture when cooked. Avoid sealed plastic too, because potatoes need air, and the paper bag they arrive in is ideal. Keep them clear of onions, which speed each other's decline. In good conditions, fresh Epic will keep for around three weeks. If a green tinge appears, cut it away generously and cook the rest. When your order arrives, open the box promptly and move the potatoes to a cool dark spot.
