Spud Sisters Famous Crispy Xmas Roast!

Introduction

Our brother David is a fabulous cook and has the giant responsibility of satisfying the Spud Sister family on Christmas day… and he has not disappointed yet!!!

Adjust this recipe cater the amount you need for your Christmas guests.

Ingredients

  • Plain flour (self-raising will do if you do not have plain flour)
  • Salt and Pepper
  • Duck Fat
  • Olive Oil

Instructions

Preheat the oven to 180c

‘Par boil’ the potatoes for roughly 10 min from the boil until a knife just pushes into the spud. Remove the potatoes from the boiling water and allow them to cool. Once cooled, roll them in plain flour and season well with salt and pepper. Tap off the excess flour, then rub them all over with the mixed together duck fat and olive oil. 

Cook the potatoes on 180c for roughly 30 to 40 minutes, tossing and turning them halfway through. Crank up the oven to 210c for the last 15 min until they get to the crispy, golden-brown colour you want!
